It sounds unusual but this standard beef stew taking into account bearing in mind undertones of chocolate and tawny peel tastes sensational.

  • 250g piece pancetta coarsely chopped

  • preheat oven to 160u00b0c heat a large flameproof casserole dish greater than high heat grow the pancetta and cook stirring for 2 3 minutes or until golden transfer to a heatproof bowl grow 60ml 1 4 cup of the oil to the casserole dish accumulate one quarter of the beef and cook turning for 5 minutes or until brown transfer to the bowl following the pancetta repeat in 3 more batches in the same way as the long lasting beef reheating the dish amongst batches
  • build up the vinegar to the dish and cook stirring to dislodge any bits that have cooked more or less to the base for 1 2 minutes pour beyond the beef mixture

  • preheat oven to 160u00b0c use a spoon to remove any fat from the surface of the stew cook the stew stirring on top of higher than low heat for 5 minutes or until incensed through bake in oven for 45 50 minutes or until the meat is pain and the sauce thickens sprinkle the stew later parsley to serve
